How To: Cut a Honeydew Melon

Mountain Dew Cake

Okay... I know Mountain Dew cake sounds weird. But I have had good luck with putting Mountain Dew in baked goods before, so I decided to give it a try. It actually ended up tasting more like a very citrusy cake rather than tasting strictly like Mountain Dew. It is very moist and in my opinion doesn't need frosting, but I bet would be good with a light lemon or lime glaze.

Taco Seasoning

I never really cared for the taco seasonings you buy in the little baggies. They always seem too salty or too spicy. I came across this recipe and it's actually not too bad. Still just a touch on the salty side, but it is not too spicy and the cumin adds some great flavor. The recipe below makes about 3 tablespoons of seasoning which is good for about 1 pound of meat. We put it on some chicken and made burritos with beans, cheese, and sour cream. Turned out quite tasty.

How To: Melt Chocolate

Sounds easy enough right?...but melting chocolate can be one of the most frustrating things on the planet. There have been several times in the past in my attempts to melt chocolate it either wouldn't melt, semi melt into weird half melted chunks or I ended up burning the bottom. The method below I have found is the easier/best way to melt chocolate without having a double boiler. It hasn't failed me yet.

S'mores Brownies

Brownies covered in marshmallows!?! It's got to be good! But be prepared to get messy. These brownies are delicious but it is absolutely impossible to stay clean while eating them. :D Not necessarily a bad thing right?

Avocado Mango Salsa

I consider myself a picky salsa eater. I don't like it too chunky because it always seems like you get one piece of tomato on your chip. I don't like it too spicy because I am a total spice whimp. But when I saw this recipe, even though it was a chunky salsa, I decided to try it anyway because it has two of my favorite things in it...avocados and mangos. And I tried to cut everything as small as possible without cutting my fingers to avoid to major chunkiness. It turned out to be one of my favorite salsas. I am seriously considering making this every week for football games. My only critique with this recipe is I felt it could have used maybe a 1/2 or even 1 more whole avocado. The next time I make this I will definitely add more...can never have too much avocado.

Chocolate Thumbprint Cookies with Ganache Filling

My friend Maureen and I made these cookies for the first home football game. They turned out pretty good. The ganache had a great flavor and the cookies almost had a smoky flavor to them. All in all, a very nice chocolate cookie.

Tailgating 2011: Smoked Ribs

For the first Florida home game, my boyfriend and his buddy decided to smoke some ribs. I didn't do much to help on this one except take pictures and eat way too much, but I decided to post the recipe because they turned out excellent. We also cooked some corn on the cob for a side. Let just say I was totally stuffed at the end of the day.
