Ginger-Orange Zest Roasted Pumpkin Seeds

This is the last post of the Yummy Pumpkin Seed Marathon. So far we have seen Cheesy, Curried, and Cinnamon Sugar and we can't forget last years Garlic Rosemary. I think these ginger orange seeds are my favorite from the marathon. A hint of sweet and the ginger is light. Plus these smell up your kitchen something wonderful when they are being baked. Curry Roasted Pumpkin Seeds

This is part 3 of 4 of the Yummy Pumpkin Seed Marathon. We are starting to get into the weirder stuff now. I have never seen seeds like this before, and considering how strong curry is, these came out really nice. The curry was actually very light but very tasty. The egg adds a nice texture, which is something else I have never seen. I highly recommend these.

Spider Web Deviled Eggs

I saw a picture of these in a magazine a few weeks ago and thought they were so awesome. However, when reading the recipe I realized it made absolutely no sense. So I did what I thought was the correct way. And it worked for the most part. My suggestion for the recipe is when you crack the egg, make sure the cracks are large and go through the membrane layer if possible. If not you will end up with some areas that are a lot darker than others which is what happened to my eggs. But considering that, I thought it still turned out awesome and is a really cool simple trick to add a little spunk to your Halloween themed deviled eggs. A small note on the ingredient portions is I always make these to taste and texture so the values below are approximate.

Dylan's Avgolemono (Greek Lemon Soup)

I LOVE this soup! I haven't had the best experiences with Greek food in the past, but my boyfriend made this for me to convince Greek food was yummy. And he was right. This is hands down one of my favorite soups now. My boyfriend has to hide it from me, because I will eat it all. It has a great texture and you get just a hint of lemon with each bite. In my opinion, this soup is good any time of the year, great for when you're not feeling well, and's just plain good. And it takes only 20 minutes to make.

Salmon is one of my favorite meals ever! For as long as I can remember, my mom would buy the smoked salmon stakes and I would eat it cold as a snack. This was my first time cooking salmon, and it wasn't as bad as I thought it was going to be, actually it was really easy. And with the butter sauce it tasted great.

I feel completely silly in saying I did not know you could brown butter until recently. But it is a simple technique that adds a lot of flavor. But you have to be careful. Once the process begins, the butter browns very quickly, so watch it carefully to avoid burning.

"Cheater" Pumpkin Muffins

I love pumpkin muffins. I call these "cheater" muffins because they are not entirely from scratch. The recipe calls for pre-made spice cake mix. This recipe is soooo easy, and they make a great to-go breakfast. I also put some sunflower seed kernels on top (because apparently pumpkin seed kernels are hard to find).

Chocolate Insanity Cake

This was a surprise birthday cake for my friend Matias. I found this recipe and showed the picture of the cake to my lab buddies a few weeks back and they continued to ask me on a weekly basis "Where's that chocolate cake?" and "Why haven't you made the chocolate cake yet?". Creepy-Crawly Chocolate Mice

I am attempting to widen my knowledge of Halloween treats. I saw this and thought it was adorable. These little mice are definitely more cute than creepy, although with all of them staring at you on plate does have a certain creep factor to it. This recipe calls for chocolate cookie crumbs...I used Triple Double Oreos, cream and all. They taste amazing.

Baking Blooper: Cupcake Filling

I typically try not to post my cooking mistakes unless they are hilarious disastrous...well that is exactly what happened when I made Bleeding Vampire Bitten Cupcakes. Those cupcakes had a raspberry filling which was absolutely delicious with the vanilla cake and icing. However I made a horrible mistake when it came to filling the cupcakes which lead to a hilarious result.

A while back I made raspberry filled lemon poppy seed muffins. When making these, I filled the the muffin liner half way with lemon poppy seed mixture, then placed the raspberry filling, covered with more mixture and baked. They turned out amazing.

Homemade Pie Crust

I am proud to say this is the first time I have ever made pie crust...and if I must say it was way over due. This was a lot easier than I thought and I now regret buying pre-made pie crust for so long. My only advise with this recipe is if you do not have a potato masher, get one. It makes your life so much easier in the end when it comes to smashing the butter. I used a fork and it worked, but a masher would have saved me a lot of time.

Homemade Pumpkin Puree

I love pumpkins!!! I have carved them and roasted their seeds, but this is the first time I have ever made puree. I was a little worried I would end up with some stringy mess that is nothing like you buy in the cans, but it is actually not too hard to do. Other than it being a slightly brighter color of orange, it is just like the canned puree.

Bleeding Vampire Bitten Cupcakes

October is finally here. This is my favorite time of the year. The weather is fantastic, the leaves are changing color, pumpkins and apples are in season, and in my opinion the best part is Halloween is coming!!!
