Tailgating 2011: Deep Fried Turkey

This past Saturday was the last was the last home game of the season. The game did not start till 7 pm, so we decided to go out with a bang. Everyone contributed and brought either a side or dessert. We had everything, from mashed potatoes, to mac and cheese, not to mention apple pie and squash cheesecake bars. And the main course?...we deep fried two 12 lb. turkeys. How many engineers does it take to put together a turkey frier?

I can not take credit for this turkey. My boyfriend and his buddy were in charge of the main course. They injected both birds with butter and rubber it cajun seasoning. Nothing like prepping a turkey in the back of a pickup truck.

Once the bird was prepped we put it on a giant hook and lowered it into the oil that was heated to 135 degrees.

It cooked for 35 minutes and tada!! A gorgeous turkey.

The turkey was moist and juicy with a great flavor. Everyone's sides were awesome!

As you can see, it was my second Thanksgiving dinner. :D I believe I had turkey, sweet potato casserole, mac and cheese, ranch rice, massed cheesy potatoes, and stuffing.

Everyone had no problem filling their bellys. Brandon (bottom right) was especially happy.

A second Thanksgiving is not complete without a dessert bar on a beer pong table. We had several pies and squash cheesecake bars. It was also a friends birthday so I made here a orange tequila cake cream cheese/cool whip icing.

It was an awesome tailgate and I can not wait till next season. Brandon on the other hand, I think ate too much.
