Pumpkin Honey Cornbread

Wow my 200th post! Didn't see that one coming. 200th post means this recipe has to be good and it is. I am very picky about my cornbread. I do not like it dry or crumbly which unfortunately a lot of cornbread's tend to be. This recipe is super moist, almost like cake. This is my favorite cornbread recipe I have found so far.

Slow Cooker: Moroccan Chicken

But this recipe is too good to not post because I forgot to take a picture. The chicken falls off the bone. Flavor is fantastic and it's done in the slow cooker. Cast Iron Mac and Cheese

There is sort of a funny story to this recipe. While my boyfriend was out playing frisbee, I fell asleep on the couch watching some show. I couldn't even tell you what it was. When he came back (and I was still asleep), the TV show was showcasing a restaurant in New York that only serves mac and cheese in individual cast iron bowls. When I finally woke up, he was in the middle of making this. He said the show inspired him and cast iron mac and cheese sounded too good to pass up. :D

40 "Interesting" Ice Trays!

This blog post is going to be a little different than my usual posts, but I needed to indulge my inner geek a little bit. I had a lot of fun writing this post but I also discovered I have a pet peeve that requires a small rant. First off, when the hell did it become the "it" thing to not have regular ice cubes??? I didn't realize how popular non-cube ice tray had become. So popular in fact, I had a little trouble finding the classic 70's blue, stack-able ice cube trays that I'm pretty sure everyone had at one point. I kind of like this new trend. I personally have the shot glass molds. It is a great idea for parties and what not. But I noticed a trend with these new popular trays that really annoys the hell out of me...

Bacon Artichoke Quiche

I don't have too much to say on this one other than I needed something to put in my pesto swirl crust. The quiche itself is very good. There is a lot of flavor and you can taste every ingredient, including the pesto in the crust. I personally really like this recipe because the quiche is chunky. Nice big pieces of artichoke heart, bacon and mushroom breaks up the egg nicely.

Friday can not come fast enough!!! I have been OBSESSING over this movie for well over a year now. How excited am I you ask? Well, I am flying into Seattle on Friday for a friends wedding. My plane lands at 12 am Friday morning...for those of you who are fans know this means I will miss the midnight showing on opening day. Sad. But not to worry. I have tickets for the 3 am showing. Yep. Straight from the airport to the nearest IMAX theater. I even have 6 am tickets in case my flight is delayed. Now I'm sure you're thinking, this girl is batshit crazy (see what I did there). I am totally okay with that.

Pesto Swirl Crust

This idea has been brewing in my head for a few months now. With the popularity of the cinnamon roll pie crust, I was trying to come up with more decorative pie crusts. I decided to do the same swirl pattern but with pesto and used this crust for a quiche. To my surprise, my first experiment was a success! The crust is fantastic! The pesto tastes amazing! I highly recommend giving this one a try.

Fish Tacos with Cilantro Lime Sauce

I have been slacking a little this week with posting but that doesn't mean I haven't been doing a little cooking. I had some extra fish left over, so decided to make some yummy tacos. The fish seasoning is simply and delicious and I absolutely love the cilantro lime sauce. The sauce would be great too on gyro meat or even on a steak. Overall, these are great tacos for quick, delicious dinner.

Carolina Mustard and Thick Kansas City BBQ Sauce

Summer time means BBQ! Time to make some BBQ sauce. Don't get me wrong, nothing wrong with a little A1 sauce. But there is something about homemade BBQ sauce. Can't get any fresher than that. Both of these sauces are seasoned very well and have the distinct regional flavors. I am not a huge mustard fan, but I do enjoy a good mustard sauce. It is perfect on smoked chicken or pulled pork. The Kansas city is tomato based with a slight sweet taste. If you want a little heat, add a little hot sauce or chipotle powder.

Simple Blue Cheese Coleslaw

I have never been a huge fan of coleslaw, but I decided to give this recipe a try specifically for the blue cheese and the small amount of vinegar. And for someone who is on the edge of being anti-cabbage, I really liked this. The blue cheese is just enough so you get a hint of it over the mayo. I highly recommend to toss the coleslaw on top of any BBQ sandwich (in this case a smoked BBQ chicken sandwich).

Grilled Marinated Artichokes with Various Dipping Sauces

If you follow my blog, you know I have a slight obsession with artichokes. This is the first time I have ever marinated or grilled them. They turned out amazing! Definitely going to make these again. And no artichoke is complete without some sort of dipping sauce. I made three different sauces; garlic mayo, garlic herb butter, and a sun dried tomato sauce. All of these sauces are simple to make and add a nice punch to the artichokes. Please note I was cooking these for 40 people so the pictures show a lot more than the recipes actually calls for.

Coconut Chicken Soup

What to do with left over rotisserie chicken and left over coconut milk? Random ingredients I know, but we got lucky and came across this recipe from Joy of Cooking. This recipe reminded me more of a curry than a soup, just without the curry. :) We put it over rice and it was delicious. This is very simple, taking roughly 30 minutes to make.

Grilled Rosemary Brie Chicken Sandwich

I am going to say this flat out, this is one of the best sandwiches I have ever had. The marinade for the chicken is very strong and flavorful. I used rosemary cut fresh from my garden, so I highly encourage getting the freshest rosemary possible. You can put anything you want on this sandwich, but the chicken has so much flavor and the brie adds a nice light texture, I really don't think this sandwich needs condiments. Also being from California, it is not a proper sandwich unless it has avocado on it.  Just try it! It's amazing!!
