Peanut Butter Mousse Topped Cheesecake

It's my boyfriends birthday today! I made this cheesecake specifically for the large amounts of peanut butter. He loves anything with peanut butter. This cheesecake tastes amazing (the mousse is my favorite part)! If you have got the time, I highly recommend this one.

Crust: 
2 c. crushed peanut butter Oreos (approx. half a pack)
1/4 c. butter, melted

Cheesecake: 
4 (8oz) sticks of cream cheese, room temperature
1.25 c. granulated sugar
4 eggs
3/4 c. heavy cream
1 Tbsp. vanilla extract

Peanut Butter Mousse:
8 oz cream cheese, room temperature
2/3 c. peanut butter
1Tbsp. milk
2 c. powdered sugar
2 tubs (8 oz.) Cool Whip
Reese’s Cups (optional)

Peanut Butter Sauce:
1 can (14 oz) sweetened condensed milk
1/2 c. butter
1/2 c. creamy peanut butter
1/2 tsp. vanilla

Crust:
1. Preheat oven to 350 degrees.
2. Crush Oreos in a blender.


3. Mix crushed Oreos and melted butter and press into the bottom of your pan.

 


4. Bake for 7 minutes and cool on a wire rack.


Cheesecake: 
5. In the bowl combine the sugar and cream cheese together until smooth.

 

 

6. Add eggs, one at a time making sure to scrape down the bowl in between each egg.
7. Add heavy cream and vanilla and mix until creamy and smooth.


8. Pour batter into prepared crust.


9. Bake 45 to 55 minutes until the edges appear to be set. The center will still have some jiggle to it.


10. Turn the oven off but leave the cheesecake in the oven for 1 hour (Note: the cheesecake should reduce in size as it cools).


11. After 1 hour has passed, remove the cheesecake and place on a cooling rack to cool completely.


12. Once the cake is completely cooled, chill for at least 5 hours.

Peanut Butter Mousse:
13. In a bowl combine cream cheese, peanut butter and milk and mix until smooth.

 


14. Slowly beat in powdered sugar then fold in the Cool Whip.
 

15. Spoon over the cheesecake. (Optional: Garnish with peanut butter cups).


 

16. Chill for at least 3 hours. 

Peanut Butter Sauce:
17. Combine all ingredients over medium heat until melted.



18. Drizzle peanut butter glaze over a piece of cheesecake and stuff face!!
