Seared Tuna with Basil Greek Olive Pesto and Homemade Creamy Pesto Fettuccine

Spiked Apple Cider

This is some dangerous stuff. You can not taste the rum what so ever and it knocks you on your butt. It is so tasty, my friends and I drank it too fast. We were singing a happy tune in no time.

Creamy Mashed Potatoes

Boy oh boy, these are some good mashed potatoes. These are so creamy you semi hate yourself after eating them. This is a recipe from Pioneer Woman. She is like a lesser know version of Paula Deen. All of her recipes are fatty, full of butter and delicious.

Slow Cooker: Tortellini

Pasta in the slow cooker always interests me mainly because they can turn out really, really good or really, really bad. My mom found this recipe somewhere and sent it to me. She was worried the pasta would be too squishy and asked me to try it. So I did and I must say, this is pretty tasty (and not overly squishy).

Pumpkin Pie Jello Shots

This last week was Homecoming week at UF. A bunch of people were in town for a visit. For tailgating, I decided to make some jello shots. But I didn't want to make just any jello shot. When I came across these I couldn't wait to try them out.

Pumpkin Spice Rice Krispie Treats

I have been a little busy the past month and haven't had anytime to cook. But Halloween is my favorite holiday and even though I didn't have time to make a costume, decorate, or even buy pumpkins this year, I couldn't pass up on making some little treat.

HAPPY HALLOWEEN!!!

Sparkling White Sangria

Another recipe from The Columbia. This is by far the best sangria I have ever had. For me it is the sparkling wine that makes it so yummy. This is perfect for a nice sunny day.

S'mores Whoopie Pies

From hunting around the blog-o-sphere, I keep coming across the same types of Whoopie Pies: chocolate, pumpkin, and red velvet. I was excited when I came across this one. Different and yummy. Did experience some minor bloopers...but other than that these are messy and delicious!

Smoked Chicken

Smoked chicken is one of the most underrated things on the planet. It is delicious! Delicious! I'll say it one more time. Delicious! It is by far my favorite way to have chicken. It is loaded with flavor, it is not dry what so ever. Just try it folks. You will not regret it.

Heisenberg's Blue Sky (Breaking Bad Meth Candy)

So far it has been a good weekend. I spent my Saturday sitting on the couch, scarfing down an entire bag of Brookside pomegranate chocolates, and watched the entire first part of season 5 of Breaking Bad. With the premiere of the final episodes coming up on Sunday night, I decided to keep the Breaking Bad spirit going by making some meth candy...aka blue apple flavored rock candy.

Grilled Bacon Wrapped Herb Stuffed Rainbow Trout

We have a fantastic fish market in town. Local, fresh product coming through the door throughout the day. Recently they had some fresh whole rainbow trout. We decided to give it a try on the grill, having never grilled fish before. We kept it simple and it turned out wonderful. Nice, flaky fish with a punch of flavor.

Sauteed Sweet Potatoes with Bacon

This recipe we completely made up...sort of. I was watching a video about Christmas Abbott, the first woman to be on a NASCAR pit crew. She's a beast. She made this dish while answering interview questions. I thought it looked good and decided to give it a try.

Chicken in Basil Cream

I am a sucker for basil. My basil plant is no longer a plant, more like a tree and it needed a trim. Now with a giant pile of basil on the counter, I wanted to use it while it was still fresh. I hunted around and came across this. It is kind of like a chicken parmesan with a difference sauce. The sauce is amazing by the way. Highly recommend this one.

Creme Brulee-d Pork Belly Confit

Alright, we're going french and fancy. What is creme brulee-d pork belly confit? Caramelized bacon folks! CARAMELIZED BACON!  I saw this recipe and had to try it. I have tried to cook pork belly in the past and failed horribly. So I was determined to make this recipe work!! And it did!!! And it was delicious!!!

Columbia's "1905" Salad

This weekend my boyfriend and I took a day trip up to St. Augustine for a day at the beach with some friends. After a long day soaking up sun, we decided to pay a visit one of the best restaurants around, Columbia Restaurant. In 2005, their "1905" salad was voted one of the top 10 salads in the US. Both of us in the mood for something light, we decided to try to make their salad. This is their recipe is straight from their website, so here goes nothing.

Beer Steamed Clams

I saw this recipe a few months back and I have been dying to try it. It is delicious and other than the slightly tedious cleaning of the clams, this recipe is quite easy.

How To: Clean Clams

My first attempt at cooking with some clams. If you don't want your food to have a ton of grit, the clams need to be cleaned.

I am on a cupcake kick. Yesterday was the Hogtown Craft Beer Festival. We live within walking distance, so our place was the official crash pad afterward the festival to sober up. Cupcakes with oozy, gooey-ness sounded perfect after drinking beer all afternoon.

Slow Cooker: Chicken Soup

It has been awhile since I have done a slow cooker recipe, and chicken soup just sounded good. I really like this recipe. The broth is more like a vegetable soup, the chicken falls apart, and the beans and corn add some nice flavor.

Too intimidated to use my mixer!!!

My KitchenAid mixer now looks like a P-51 Mustang. I am so giddy about this I can hardly contain it. Time to put this enthusiasm towards some serious Lego building.

Continuing with my grapefruit obsession, I decided to try this recipe. I think this is a very interesting combination and frankly I have never seen anything like it. These are great in the morning with a little honey. These muffins are like a soft cornbread with a nice citrusy sweetness.

I have been super busy, so for this Valentines Day, I wanted a delicious treat that was easy to make. I am a sucker for truffles but was not in the mood to get covered in chocolate in the dipping process. So truffles on a spoon seemed the way to go. Quick, easy, and clean. :D
