Blueberry Lemon Mousse Cake

It was one of those weekends where I didn't have any plans and I was in the mood to make a cake. So I chose this recipe because (a) it sounded delicious (b) I like multilayered cakes and (c) seriously had nothing to do and I could stretch this cake layering process over the whole weekend. ;)

Mushroom Parmesan stuffed Chicken

My husband walks into the room and says, "I want to cook something. I've got two recipes and I can't decide..." After a quick glance at his newly found recipes, I picked the mushroom parmesan stuffed chicken and I am glad I did. This is quite the yummy dish.

This is one of our go to simple meals. About 45 minutes to make and it is great left over. Easy as that!

Herb Crusted Rock Fish With Mustard Spinach Salad

Clearing out the last bit of rock fish and spinach from our fridge. After the Rockfish Gratin we decided to go a slightly different route with the recipe but with pretty much the same ingredients.

Pancakes with Blueberry Compote

On Saturday mornings, I like to go to the gym. It is a particularly fun class where everyone is giggling and laughing at the fact we are willing to workout hungover at 8:30 in the morning on a Saturday. After a particularly hard workout, I came home to surprise pancakes topped with blueberry compote!

Almond Cream Dip with Strawberries and Mini Nilla Wafers

Recently, I volunteered to make some desserts for a party. We were celebrating our coaches decision to leave the gym and go back to engineering. A send-off party if you will. What do you make for a bunch of crossfitters? I seriously considered making something paleo, then thought...f*** it! I'm going paleo-free! And it was a hit!

Pear Feta Salad

Mmmmmm I love me a good chopped salad. This is officially my new favorite salad. It has just the right amount of salty, sweet, and acid for me. And I didn't feel guilty having two heaping bowls full for dinner.

Rock Fish and Spinach Gratin

This one of those recipes where we literally googled spinach and rock fish to see what came up, since we had so much of both in the fridge. This was new and different, so we decided to give it a try.

Korean BBQ Baby Back Ribs

This recipe sounded so good (and easy) we went out a bought a rack of ribs specifically for this...and it was worth it. These are delicious! Seriously this sauce could be used on anything. Stir fry. Plain rice. Anything!

Bailey's Cheesecake Brownies

It was a nice sunny Sunday. Worked out in the yard for most of the morning planting our summer garden. Played with the dog. Had some friends over for a BBQ. And I was in the mood for some brownies. So here we go. Some boozy brownies.

Cheesy Ham Chowder

A lazy Easter Sunday full of Netflix and beer. My boyfriend and I stuffed our faces full of ham and mashed potatoes. Then we realized we had 8 pounds of ham in the fridge. What to do with 8 pounds ham? Soups, chowders, and chilis! This is a rich chowder but the flavors are not overwhelming and it is great left over.

Honey Roasted Rainbow Carrots

There is something about rainbow carrots. They do not taste any different but it makes your plate so much prettier. I actually want to eat more because they are so pretty. So when I was in the mood for a simple to fix veggie, honey roasted rainbow carrots was a no brainer.

Roasted Chicken Breast with Asparagus and Tomatoes

I have been trying to eat better lately so I have been looking for simply, healthy, throw together meals. I really like this one because it was simple but still had a lot of flavor. This recipe I sort of followed, but really I did a "eh...thats good enough" kind of thing.

Lebanese Lemon Bean Salad

I just love me some kidney beans and chickpeas. I always put them on my salads so when I saw this I had to try it. This salad has a great crunch, and for not being a huge onion fan, I like the little hint of red onion with the lemon juice. I also like how this salad fills you up but doesn't sit on your stomach. A great side for any meal.

S'mores Thumbprint Cookies

Yay! I finally got a little time to try out my brand new oven in my new kitchen. I have has this recipe in my browser tabs for a few weeks now and was able to sneak in a bit of time to try it out. These are great cookies. Not overly sweet and you can really taste each ingredient.

Seattle Food: Part 3/3...and Austin, Texas

I am officially moved out of my downtown Seattle apartment and into a cute little house in East Renton Highlands area. I finally have a kitchen, however my stuff is still on its way here. I currently sit in an empty house with an air mattress and a cat. So to kill time I have been exploring the area hunting for restaurants. I also spent a week eating and drinking my way through Austin, Texas with family. So I have added a few places from Texas to the list just for funsies.
